Simple curd rice - Thalichha Thayir Sadam


A perfect south Indian meal will never end up without this simple curd rice. Even whenever we have potluck with our friends, apart from whatever i make the job of making curd rice is usually assigned to me only. And i can happily say all the kids of my dear friends love my curd rice. I thought of posting this recipe of how to make curd rice for a long time but somehow it got postponed. So under the request of all my friends i am posting this thayir sadam recipe. 
Ingredients
Sona Masoori Rice/Raw rice
1 cup
Thayir/Yogurt/Curd
2 cup
Milk
½ cup
Butter [optional]
1 tsp
Salt
As needed
Grated carrot
2 tsp for garnishing
Cilantro
2 tsp finely chopped for garnishing

For Tempering
Mustard seeds
1 tsp
Cumin seeds
½ tsp
Bengal gram dal/Kadalai paruppu
1 tsp
Urad dal
1 tsp
Green chillies
3 finely chopped
Ginger
2 tsp finely chopped
Cashew nuts [optional]
8 -10
Raisins [optional]
8-10
Asafoetida/Hing
1 pinch
Curry leaves
6-8
Oil
2 tsp

Method

Wash rice really well, add 4 cups of water, salt and pressure cook for 4 whistles. After steam goes off, open the lid and mash the cooked rice really well with a big spoon or matthu.

Allow the rice to cool the add the curd/thayir, milk , butter and mix really well. Adjust the amount of salt at this stage. Since the rice is cooked with salt be careful in adding salt.
